Pulissery Recipe

Pulissery is a traditional South Indian and Kerala dish that is typically made with ripe mangoes, although you can also use other fruits or vegetables like ripe plantains, pineapple, or even yam. It is a sweet and tangy dish with a coconut yogurt base. Here’s a basic recipe for Mango Pulissery:

Ingredients:

1 ripe mango, peeled, pitted, and cubed 1 cup thick yogurt (curd) 1/2 cup grated coconut 1-2 green chilies, slit lengthwise 1/2 teaspoon turmeric powder Salt to taste

For Tempering:

1 tablespoon coconut oil 1/2 teaspoon mustard seeds 1/2 teaspoon fenugreek seeds A few curry leaves A pinch of asafoetida (hing)

Instructions:

  1. Prepare the Mango: Peel the mango, remove the pit, and cut it into bite-sized pieces.

  2. Make Coconut Paste: Grind the grated coconut, green chilies, turmeric powder, and a little water to make a smooth paste.

  3. Mix Yogurt: In a mixing bowl, whisk the yogurt until smooth. Add the coconut paste and mix well. Ensure there are no lumps.

  4. Cook Mango: In a separate pan, add the mango pieces along with a little water and cook them until they are tender and soft.

  5. Combine Yogurt and Mango: Once the mango pieces are cooked, add them to the yogurt-coconut mixture. Mix well.

  6. Add Salt: Add salt to taste and mix it in.

  7. Prepare Tempering: In a small frying pan, heat coconut oil. Add mustard seeds and let them splutter. Then, add fenugreek seeds, curry leaves, and a pinch of asafoetida. Fry for a few seconds until the spices release their aroma.

  8. Add Tempering: Pour the tempering mixture over the pulissery and mix well.

  9. Check Seasoning: Taste the pulissery and adjust salt and spiciness according to your preference by adding more salt or green chilies if needed.

  10. Serve: Pulissery is typically served with steamed rice. It’s a delicious and comforting dish that combines the flavors of sweet mango, tangy yogurt, and aromatic spices.
