Basundi

Ingredients:

  • 8 cup Milk
  • 1/2 Teaspoon saffron
  • 2 teaspoon powdered green cardmom

For Garnishing

  • 12 alomonds

For The Main Dish

  • 2 teaspoon lemon juice
Process :
  1. First, boil two litres of milk while stirring occasionally in a big kadai with a thick bottom.
  2. Add 2 tablespoons of the chopped cashews, almonds, and pistachios after the milk has reached a boil.
  3. Stir the milk thoroughly to prevent it from sticking to the bottom.
  4. Boil the milk for 30 minutes or until it reduces on a low flame.
  5. Till the milk has reduced to a quarter, keep stirring occasionally to prevent sticking.
  6. now thoroughly combine 1/2 cup sugar and 1/4 tsp saffron.
  7. Boil for a further five minutes, or until the milk totally thickens.
  8. now stir in 1/4 tsp of the cardamom powder.
  9. Finally, garnish the basundi with a few dry fruits and serve it hot or chilled.
