Basundi
Ingredients:
- 8 cup Milk
- 1/2 Teaspoon saffron
- 2 teaspoon powdered green cardmom
For Garnishing
- 12 alomonds
For The Main Dish
- 2 teaspoon lemon juice
Process :
- First, boil two litres of milk while stirring occasionally in a big kadai with a thick bottom.
- Add 2 tablespoons of the chopped cashews, almonds, and pistachios after the milk has reached a boil.
- Stir the milk thoroughly to prevent it from sticking to the bottom.
- Boil the milk for 30 minutes or until it reduces on a low flame.
- Till the milk has reduced to a quarter, keep stirring occasionally to prevent sticking.
- now thoroughly combine 1/2 cup sugar and 1/4 tsp saffron.
- Boil for a further five minutes, or until the milk totally thickens.
- now stir in 1/4 tsp of the cardamom powder.
- Finally, garnish the basundi with a few dry fruits and serve it hot or chilled.
