Haleem Recipe

Ingredients:

For the Haleem Base:

  • 1 cup whole wheat
  • 1/4 cup barley
  • 1/4 cup yellow split lentils (moong dal)
  • 1/4 cup red lentils (masoor dal)
  • 1/4 cup split chickpeas (chana dal)
  • 1/4 cup rice
  • 1 pound boneless chicken, diced
  • 2 onions, thinly sliced
  • 4-5 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, chopped (adjust to taste)
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 cup cooking oil or ghee
  • Salt to taste

For Garnish:

  • Sliced onions, fried until crispy
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped
  • Lemon wedges
  • Ghee for drizzling

Instructions:

  1. Preparation: Wash and soak the wheat, barley, lentils, and rice together in plenty of water for at least 2 hours. Drain.

  2. Cook the Grains and Lentils: In a large pot, add the drained grains and lentils along with 8-10 cups of water. Cook over low heat, stirring occasionally, until they become soft and mushy. This can take around 1.5 to 2 hours. You can use a hand blender to blend them into a smooth paste for a creamy texture. Add more water if needed.

  3. Cook the Chicken: In a separate pan, heat some oil or ghee and sauté the onions until they turn golden brown. Remove half of the fried onions for garnish. To the remaining onions in the pan, add garlic, ginger, and green chilies. Sauté for a few minutes.

  4. Add the chicken pieces and cook until they change color. Then add the garam masala, turmeric powder, red chili powder, and salt. Cook until the chicken is fully cooked and tender.

  5. Combine Chicken and Grains: Add the cooked chicken mixture to the pot with the cooked grains and lentils. Mix well.

  6. Simmer and Blend: Simmer the haleem on low heat, stirring frequently, for another 30-40 minutes. Use a hand blender to blend everything together until you get a smooth and thick consistency.

  7. Garnish: Serve the haleem hot, garnished with fried onions, fresh coriander leaves, fresh mint leaves, lemon wedges, and a drizzle of ghee.

  8. Serve: Haleem is traditionally enjoyed with naan or paratha, but you can also serve it with crusty bread or pita if you prefer.

This recipe can be customized by using different types of meat (like beef or mutton) or by making it vegetarian. Adjust the spice level to your preference, and enjoy this delicious and comforting dish!
