Khajur barfi, also known as date barfi or date fudge, is a delicious Indian sweet made primarily from dates. It’s a healthier alternative to traditional Indian sweets because it doesn’t contain sugar. Instead, it relies on the natural sweetness of dates. Here’s a basic recipe for making khajur barfi:

Ingredients:

  • 2 cups pitted dates (khajur)
  • 1/2 cup chopped nuts (such as almonds, cashews, or pistachios)
  • 2 tablespoons ghee (clarified butter)
  • 1/2 teaspoon cardamom powder (optional, for flavor)
  • A pinch of saffron strands (optional, for color and flavor)
  • Desiccated coconut for garnish (optional)

Instructions:

  1. Start by removing the pits from the dates if they are not already pitted. You can use any type of soft dates for this recipe.

  2. In a heavy-bottomed pan, heat the ghee on low heat. Add the chopped nuts and sauté them for a few minutes until they turn lightly golden. Remove the nuts from the pan and set them aside.

  3. In the same pan, add the pitted dates. Cook them on low heat while stirring continuously. The dates will start to soften and release their natural sugars. Mash them with a spatula as you cook to create a smooth paste. This process should take around 8-10 minutes.

  4. Add the cardamom powder and saffron strands (if using) to the date paste. Mix well to incorporate the flavors.

  5. Now, add the sautéed nuts back to the date mixture. Continue to cook for another 2-3 minutes, ensuring that everything is well combined.

  6. Grease a plate or a shallow tray with a little ghee or line it with parchment paper. Transfer the date-nut mixture to the plate and spread it evenly. You can use a spatula or the back of a greased spoon to flatten it.

  7. Optionally, sprinkle some desiccated coconut on top for garnish.

  8. Allow the khajur barfi to cool down for a bit. While it’s still warm, cut it into square or diamond shapes using a sharp knife.

  9. Let the barfi cool completely and set. You can also refrigerate it for a few hours to help it firm up.

  10. Once the barfi has set, remove the pieces from the plate and store them in an airtight container. They can be stored at room temperature for a few days or in the refrigerator for a longer shelf life.
