Millet Pilaf

Millet Pilaf is a flavorful and nutritious side dish made with cooked millets and a mix of spices and vegetables. Here is a simple recipe for making millet pilaf:

Ingredients:

  • 1 cup millets
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Rinse the millets several times and drain.
  2. A large pot should be heated over medium heat. Let cumin seeds crackle.
  3. Cook the chopped onion and minced garlic until the onion is translucent and soft.
  4. Add the diced carrot and frozen peas to the pot and cook for about 5 minutes or until the vegetables are tender.
  5. Add the rinsed millets, chicken or vegetable broth, salt, and pepper to the pot and stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low, cover the pot, and let the pilaf cook for about 20-25 minutes or until the millets are tender and the liquid is absorbed.
  7. Fluff the pilaf with a fork and serve hot, garnished with fresh parsley if desired.
