Sheer Khurma Recipe

Ingredients:

  • 1 cup thin vermicelli (seviyan)
  • 1 liter full-fat milk
  • 1/2 cup sugar (adjust to taste)
  • 2-3 tablespoons ghee (clarified butter)
  • 1/4 cup chopped dates
  • 1/4 cup chopped dried figs (anjeer)
  • 1/4 cup chopped dried apricots (khubani)
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron strands (soaked in 2 tablespoons warm milk)
  • 1-2 teaspoons rose water (optional)
  • A pinch of salt
  • A few silvered or chopped pistachios and almonds for garnish

Instructions:

  1. Preparing the Dry Fruits: Heat a tablespoon of ghee in a pan and roast all the chopped dry fruits (except raisins) until they turn golden. Remove them from the pan and set them aside. Also, roast the vermicelli in the same pan until it turns golden brown. This will give a nice roasted flavor to the dish.

  2. Boiling Milk: In a large, heavy-bottomed pot, bring the milk to a boil. Add a pinch of salt and reduce the heat to low. Let it simmer while stirring occasionally. Continue to simmer until the milk reduces to about half its original quantity. This can take anywhere from 30 to 45 minutes. Keep an eye on it to prevent it from boiling over.

  3. Adding Sugar: Once the milk has reduced, add the sugar and continue to simmer for another 10-15 minutes, or until the sugar has completely dissolved, and the milk has thickened. Stir frequently to prevent the milk from sticking to the bottom of the pot.

  4. Adding Vermicelli: Add the roasted vermicelli to the milk and simmer for another 5-7 minutes, or until the vermicelli is soft and cooked through. Stir occasionally.

  5. Adding Dry Fruits: Now, add the roasted dry fruits and raisins to the mixture. Also, add the saffron milk, cardamom powder, and rose water (if using). Stir well and let it simmer for another 5-7 minutes, allowing the flavors to meld together.

  6. Finishing Touches: Turn off the heat and let the Sheer Khurma cool down slightly. It will continue to thicken as it cools. If it becomes too thick, you can add a little warm milk to adjust the consistency.

  7. Serve: Garnish the Sheer Khurma with slivered or chopped pistachios and almonds. You can serve it warm or at room temperature.
