Sweet Seviyan

Ingredients

  • 2 tablespoon Ghee or Unsalted Butter
  • 2 tablespoon Cashews, Almonds, Sliced or damaged into small pieces
  • 1 tablespoon Raisins
  • 1 cup Roasted Vermicelli see notes
  • 1 cup Water (2 cups for stovetop method)
  • ⅓ cup Sugar
  • ½ teaspoon Cardamom powder (Elaichi)
  • 4-five strands Saffron (Kesar)
  • Pistachios sliced, to garnish (optional)

Instructions

  • Instant Pot Method
  • Start the on the spotaneous pot in SAUTE mode and warmth ghee in it.  
  • Add the nuts and saute for 30 seconds. Then upload raisins and saute for some other 30 seconds. Then upload roasted vermicelli and saute for a minute.
  • Stir withinside the final ingredients – water, cardamom, sugar and saffron. Press CANCEL and near the on the spotaneous pot lid with vent in sealing position.
  • Press MANUAL or strain prepare dinner dinner mode and set it for 1 minute at excessive strain.  
  • When the on the spotaneous pot beeps, do five minute herbal strain launch, because of this that launch strain five mins after the on the spotaneous pot beeps.
  • Sweet Seviyan are geared up to be served. Garnish with sliced pistachios.  

Stovetop Method

  • Heat ghee in a heavy backside pan on medium heat.
  • Add the nuts and saute for 30 seconds. Then upload raisins and saute for some other 30 seconds. Then upload roasted vermicelli and saute for a minute.
  • Stir withinside the final ingredients – water, cardamom, sugar and saffron.  
  • Cook on medium heat, stirring frequently. The seviyan will soak up the water in approximately 6-eight mins.
  • Serve Meethi Seviyan garnished with sliced pistachios.
